Chelbasa One | Washed Ethiopia
This lot comes from the Chelbasa One Washing Station in the Gedeb Zone, Ethiopia, managed by SNAP Specialty Coffee. Approximately 1,000 smallholder farmers contribute cherries from 2–3 hectare plots at elevations between 1,950 and 2,200 meters. The lot consists of Ethiopian Heirloom varieties Korume and Wolisho, carefully sorted, depulped, and fermented for 2–3 days before being washed and dried on raised beds for 7–10 days — all closely monitored to ensure clarity, consistency, and vibrant character.
Producer: Chelbasa One Washing Station

Brewing Recommendations
We recommend brewing Chelbesa One as a pour-over or in a drip setup, where its bright, clean flavors really shine. It’s a coffee for those who love expressive Ethiopian washed coffees, offering complexity, precision, and a little everyday magic in the cup.

"This is the best neighborhood coffee shop on the upper west side, period. Delicious coffee, delicious food, cozy interior, just the right vibe. They're open early if you need to grab coffee before work, and they're open on the weekend and it's such a fun neighborhood scene. Solid state: I love you!! Thank you for everything! Thank you for existing!! And thanks to all of the employees who are hard-working and kind."
"It’s the best flat white in NYC. I know, it’s a bold statement, but it’s true, bright delicious espresso shines through, perfect foam texture and ratio, perfect temperature. I’ve tried a lot of others and this is the best. Also they have an incredible Greens / salad / grain Bowl that’s soooo delicious and a perfect way to start the day. Great seating, service and AC."
"Absolutely the best coffee spot on the Upper West Side (& I have been to them all). It’s the local gem. Don’t skip the homemade pastries. The Banana Bread and Vatrushka are my personal faves.
There is frequently a line out the door for a reason. It’s really good. Wait in it; you will be happy you did."
