Carolina Ramirez | Colombia Washed
Carolina Ramirez is a star of Unblended Coffee's Young Producer Program in Colombia (read more about Unblended's mission here). Alongside her mother, she has produced some truly spectacular coffees in recent years. Today, her name is associated with a high benchmark of quality in Colombian coffee.
This washed process is a fresh, clean cup of coffee. A few hours of fermentation before washing results in a fruity cup full of strawberries and jasmine with a fresh thyme aftertaste.

Process Notes
This coffee was produced by mixing two different batches of coffee harvested with one day of difference, washed and dried. Once picked, the cherries are fermented for about 9 hours, then depulped and fermented for another 27 hours. A day after, the second batch is added and fermented for 14 more hours before washing it and drying it for about 2 to 3 weeks.
