A peaberry is a very specific mutation in the coffee. The coffee cherry typically has two seeds, meaning you get two coffee beans for each cherry. A peaberry is the odd coffee cherry which only has one seed. Because of this, the bean matures slower and absorbs more of the fruit's nutrients and flavor. The result is often a much more complex cup.
The peaberry is such a rare mutation that you can't breed a tree to produce only peaberries. They are always sorted after the harvest, often by hand. A lot of work goes in to producing and exporting these products.
This peaberry from the Ibonia Estate is from the town of Kiambu in southern Kenya, close to Nairobi. Leaders of the property focus on organic matter management and soil conservation as top priorities. They primarily cultivate SL28 and SL34 varieties, which are known for their high cupping scores.
