Haitian Blue Coffee is one of those rare finds—an exceptional cup that carries the heart and soul of the Central Plateau of Haiti. Sourced from small farming communities and cultivated with meticulous care, this coffee is more than just a drink; it’s a testament to tradition, resilience, and sustainability.

A Coffee with a Cause

This Haitian Blue honey process come from small, dedicated groups of farmers who cultivate coffee at varying elevations, ensuring a diverse and complex profile. These growers—680 in total—have been working with Café Kreyol (one of our sourcing partners) since 2014 to refine their processing techniques, improve fermentation, and maintain strict quality control. The result? A coffee that stands out for its flavor and its impact on the local community.

Hensito, a young and passionate coffee farmer at just 21 years old, has played a pivotal role in the Haitian Blue story. As a manager of the crop, he helped refine storage processes as production increased, ensuring that every bean maintains its integrity from harvest to roast.

Adding to its uniqueness, this coffee is Shade Grown—a rarity in Haiti—helping to preserve natural ecosystems and protect the land from deforestation. This commitment to conservation means that every cup you sip is a step toward a more sustainable future for Haitian farmers and their environment.

Haitian Blue is a coffee that speaks for itself. Scoring 89 points on Coffee Review, one of the highest ratings for a Haitian coffee, it delivers a drinking experience that’s both luxurious and comforting.

The Growing Process: Elevation & Expertise

Kreyol has been sourcing coffee from Haiti for years, but this particular lot is actually brand new! Sourced from Thiotte, which has produced excellent washed coffee for years, this lot is a honey process.

Despite the name, a honey-processed coffee doesn’t have anything to do with honey. It is a particular method of removing and drying out the seed inside the coffee fruit. Every bean of coffee you’ve ever looked at was once a seed inside the cherry of a coffee tree. Sometimes, the whole cherry is left to bake and dry out in the sun before the seed is removed, which is a natural process. Alternatively, the seed washed processed coffee is left to dry in the sun after the whole fruit has been removed.

A honey process is like a happy medium. The outer part of the fruit is removed, but the mucilage, a sticky, sugary coating, is left on while the seed dries. This gives the coffee a little bit of a sweet anf fruity edge, without the heavy body of a full natural process.

Paired with the natural savory notes of the blue mountain variety, the honey process adds the perfect note of complexity to this coffee!

Harvest & Availability

Haitian Blue is harvested between December and April, making it a seasonal specialty worth waiting for. Each year, careful hands pick, process, and prepare these beans for roasting, ensuring that only the best make it to your cup.
